Bangalore Style SARE BAIGAN KA SALAN | Brinjal Curry | مرق الباذنجان | बैंगन का सालन | DECCAN’S PAKWAN
Ingredients
1. Brinjal (Baigan): 500g
2. Tomato: 3
3. Coconut: 1cup
4. Roasted Peanut: 25g
5. Onion: 1big
6. Ginger & Garlic Paste: 1.5tsp
7. Zeera Methi Mix: 1tsp
8. Red Chilli Powder: 1.5tsp
9. Turmeric: ½ tsp
10. Coriander Powder: 1.5tsp
11. Kashmiri Chili Powder: 1tsp
12. Salt to taste
13. Oil: 3tbsp
14. Coriander Leaves: 2tbsp
15. Cumin seed: ½ tsp
Process
1. In a grinder, jar adds Peanut, Coconut, Zeera Methi Mix Grind to a paste.
2. In the same jar add onion, coriander leaves & add some water, ground to a smooth paste.
3. Next grind tomato to a smooth paste.
4. In a bowl add all the ground masala, Ginger & Garlic Paste, Red Chilli Powder, Turmeric, Coriander Powder, Salt, Chopped Onion & cut brinjal & mix well all the masala with brinjal.
5. Heat oil in a pan add cumin seed, Kashmiri chili powder & sauté for a minute on a low flame.
6. Add brinjal & fry for 2-3 min on a medium flame.
7. Add remaining masala & cook for 10 -12 min in a low to medium flame till oil gets separated.
