Soft & Crispy UDDINA / MEDU VADA | मेंदू वडा | DECCEN’S PAKWAN
Ingredients
1. Urad Dal (soaked): 200g
2. Onion: 1medium
3. Green Chili: 3
4. Cumin Seed: 1tsp
5. Black Pepper: 1tsp
6. Pink Salt: 1tsp
7. Baking Soda: ¼ tsp
8. Ginger (crushed): ½ tsp
9. Curry Leaves: 1tbsp
10. Coriander leaves: 1 tsp
11. Oil for Frying
Process
1. Soak dal for about 4-5hrs.
2. In a grinder, jar adds soaked dal & green chili, grind coarsely & add 2tbsp Water & grind into a smooth paste, don’t add too much water.
3. Remove a ground paste to the mixing bowl.
4. Add Black Pepper, Cumin Seed, Pink Salt, Ginger (crushed), Curry Leaves, Onion, Baking Soda & Coriander leaves.
5. Mix well all the ingredients & our mixture ready to fry.
6. Heat oil in Kadai in a flame.
7. Give the shape of vada drop in oil & fry it on medium flame till it turns golden brown.
8. Keep flipping in between once it turns golden brown remove it from oil.
9. Uddin vada is ready to serve with chutney/sambar.
