Restaurant style CHICKEN FRIED RICE

Restaurant style CHICKEN FRIED RICE | أرز دجاج مقلي | चिकन फ्राइड राइस | DECCAN’S PAKWAN

Ingredients
1. Chicken (strips): 250gms.
2. Rice: 600g
3. Eggs- 3
4. Garlic (Crushed): 6 cloves
5. Pink Salt-2tsp
6. Shah Zeera: ½ tsp
7. Pepper powder: 1 tsp
8. Dark Soy sauce: 3 tsp
9. Carrots (julienned): ½ cup
10. Green capsicum (julienned): ½ cup
10. Red Bell Pepper (julienned): ½ cup
11. Yellow Bell Pepper (julienned): ½ cup
12. Spring onion, greens: 1 tbsp
13. Green Peas: 1cup
14. Oil: 4 tbsp
15. Green Chili (chopped)
16. Coriander Leaves (chopped)

Process:
To cook the Rice:
1. Take one more heavy bottom pan & add around 1 litre of water. Place it on high heat.
2. In water add Shah Zeera, Salt (to taste).
3. Stir it well to dissolve the salt completely.
4. Once the water starts boiling, add the strained basmati rice & stir it well.
5. Continue to boil it on high heat, stirring few times very gently to not break the rice.
6. After 8-9 minutes when the basmati rice is almost done (90%) remove it from heat and strain the water.

To make Fried Rice
1. Wash and pat dry the boneless chicken pieces and cut them into strips. Set aside.
2. Julienne cut the carrots, Yellow Bell Pepper, Red Bell Pepper, and green peppers.
3. Crushed the garlic cloves & Beat Three eggs in a bowl.
4. Heat 1 tbsp oil in a Pan and add the beaten eggs. Add a pinch of salt to season, mix gently, and then scramble it on medium heat. Remove onto a plate and set aside.
5. Heat 3 tbsp oil in a Kadai add the Crushed garlic. Give a stir and fry it on high heat for around 30 secs.
6. Add the chicken strips and stir fry on high heat for 1 min till they turn white.
7. Now add the Green Peas, mix and stir fry for around 3 mins on high heat till the strips are golden brown.
8. Add the julienned carrots and peppers, mix and stir fry for 2 min.
9. Now add the salt & pepper powder, mix & Add 1 tsp soy sauce, mix and stir fry 2 mins on medium heat.
10. Add the scrambled egg and the spring onion greens.
11. Add chopped green chili & coriander leaves.
11Add the rice and mix with the chicken and veggies.
12. Toss well and serve.
