SIMPLE MUTTON PAYA RECIPE | PAYA KA SHORBA | مٹن پایا | मटन पाया | DECCAN’S PAKWAN

Ingredients

  1. Lamb legs or Bakre ke Paye : 5
  2. Onions : 2 (chopped)
  3. Turmeric Powder : 1 Tsp
  4. Ginger & Garlic Paste : 2 Tsp
  5. Spices (Garam Masala Powder) : 1 Tsp
  6. Coriander Leaves : 1 cup (chopped)
  7. Mint leaves : 1 cup
  8. Whole Green Chillies : 5
  9. Cooking Oil: 3 Tbsp
  10. Wheat Flour : 1Tbsp
  11. Bay Leaves : 2
  12. Elachi (Cardamom) : 2
  13. Lavang (Clove): 4
  14. Ginger: ½ inch
  15. Black Pepper: 1Tsp
  16. Cinnamon :1 Stick

Procedure:
1.In a Pressure cooker add lamb legs or paye. Add one chopped onion, turmeric powder, whole spices as mentioned in ingredients, ½ cup coriander(chopped), half cup mint leaves(chopped), salt and 1 litres of water.

  1. Close the lid and pressure cook for 10 whistle, simmer for 5 minutes so that the legs get tender.

3.Heat Oil in a Pan add chopped onions and fry for 5 min in a medium flame then add ginger and garlic paste sautee for 1 min.

  1. Add chopped Tomato and cooked for 3 min and then add green chilli, Salt and Turmeric cook till tomato get tender.
  2. In a frying pan, only three tablespoons of oil in the pan, when the oil is hot, add one tablespoon. Add 1tbsp of wheat flour and stir to golden brown.
  3. Add this cooking masala and sauted flour to the broth and Garam masala,add chopped coriander leaves and mint leaves and simmer for 10 minutes in a low flame.
  4. Paya is ready to serve with Roti or Naan.
