Dhaba Style EGG CURRY | ANDA MASALA Recipe | بيض بالكاري | ढाबा स्टाइल अंडा मसाला | DECCAN’S PAKWAN
Ingredients
1. Boiled Eggs: 5
2. Oil: 4 tbsp
3. Tomato (Chopped): 1
4. Onion (Chopped): 1
5. Tomato Puree: 1 cup
6. Red chili Powder: 1 tsp
7. Coriander Powder: 2 tsp
8. Cumin Powder (Zeera): 1 tsp
9. Turmeric: 1 tsp
10. Javetri: 1 pc
11. Cumin Seed: ½ tsp
12. Salt to Taste
13. Hing: pinch
14. Chopped Garlic: ¼ tsp
15. Chopped Ginger: ¼ tsp
16. Slit Green chili: 3
17. Ginger & Garlic paste: 1tsp
18. Kasuri Methi (Dry Fenugreek Leaves): 1tbsp
19. Kashmiri Chili powder
20. Garam Masala: ½ tsp
21. Coriander leaves: 1 tbsp
Process
1. In a bowl add Kashmiri chilil powder, chili powder, turmeric, salt & oil, Prick the eggs with a fork and mix well.
2. Heat oil in a kadai and fry the eggs for 2-3 mins on low heat till light brown. Remove and set aside.
3. Heat Oil in a pan, add Javetri (optional), Cardamom, Cumin seed (zeera) & saute for a minute.
4. Add chopped onion & cook until the onion turns brown. Give a stir add the slit green chillies.
5. Add chopped Garlic, Chopped Ginger and some ginger & garlic paste cook for 1 min on a medium flame.
6. Add little water and fry for 1 min, add Coriander powder, Cumin powder, Turmeric, add little water, and mix well.
7. Add Chopped tomatoes, saute for a min add tomato puree & salt, red chili powder cook for 2-3 minutes
8. Now add 200 ml water, cover and cook on low heat for 8 mins till oil separates.
9. Add whisked curd & cook until oil gets separated.
10. Add Freid egg (Remember to prick holes in the eggs before frying, so they don’t burst open) cook for 5 min.
11. Lastly add coriander leaves & add the Kasuri Methi and simmer on low heat for 2 mins.
12. Serve with rice or roti..
