EGG MALAI MASALA | EGG MALAI CURRY | البيض مالاي ماسالا | अंडा मलाई मसाला | DECCAN’S PAKWAN
Ingredients:
1. Eggs (Boiled, cut in halves): 5
2. Onions: 2 medium
3. Green Chilies: 3
4. Ginger & garlic Paste : 1 tsp
5. Cumin (Zeera) Powder : 1 tsp
6. Cumin seed : 1 tsp
7. Black Pepper Powder : ½ tsp
8. Garam Masala Powder : 1 tsp
9. Coriander Leaves : ½ bunch
10. Milk : 200 ML
11. Pink Salt : 1 tsp
12. Oil : 3 tbsp
Process
1. Boil the eggs & cut into halves
2. Put the Chopped onions & green chilies into a grinder & blend into a smooth paste.
3. In a pan, add oil & once medium hot, add the onion & green chili paste in a low flame cook for 2 min.
4. Now add the ginger & garlic paste & mix well.
5. Keep cooking in a low flame, for about 15 mins till paste changes color.
6. Now switch off the flame & add the milk stirring continuously. Mix it well with the Masala.
7.Switch on the flame & keep in low flame till oil separates.
8. Add cumin powder, pepper powder, garam masala powder & salt. Mix well & cook for a 2-3min.
9. Place the egg halves in the gravy, yolk side down to absorb the spices. Cover & cook for few mins.
10. After few mins turn the egg halves yolk side up.
11. Add the finely chopped coriander leaves, mix well close the lid & Cook till oil separates.
SERVE & ENJOY with rice or roti
