TASTY CHICKEN BIRYANI

TASTY CHICKEN BIRYANI | برياني دجاج هندي | चिकन बिरयानी | DECCAN’S PAKWAN

Ingredients

  1. Chicken : 800g
  2. Basmati Rice : 800g
  3. Oil : 150 ML
  4. Onions (sliced) : 4 medium
  5. Ginger Garlic paste : 4 tsp
  6. Tomatoes ( sliced) : 2 medium
  7. Green Chillies : 6no
  8. Coriander leaves (chopped) : 1 cup
  9. Mint leaves (chopped) : 1 cup
  10. Whisked Curd : 1 cup
  11. Lemon Juice : 1no
  12. Shahzeera (caraway seeds) :2 tsp
  13. Green cardamom – 4
  14. Cloves – 4
  15. Cinnamon- 3 pieces
  16. Salt to taste
  17. Red chili powder : 3 tsp
  18. Turmeric : 1 tsp
  19. Coriander Powder : 2 tsp
  20. Bay leaves : 2

Process
To cook the Chicken:

  1. Heat oil in a heavy bottom pan and add whole garam masala and sliced onions.
  2. Fry on high heat for around 12 mins till the onions are light brown.
  3. Add the Chicken and fry on Medium heat for 2 mins.
  4. Now add the Ginger & Garic Paste mix and fry on low heat for 2-3 mins.
  5. Add the Turmeric, Red chili powder , Coriander powder mix and fry on medium heat for 3 mins
  6. Now add the sliced tomatoes, mix it well and cook on medium to low heat for 4-5 mins till soft.
  7. Keep the heat on low and add the Lemon juice, Coriander leaves and mint. Give a mix and then add the Whipped curd.
  8. Cook on low heat for 2 mins till oil separates.
  9. Cover & cook on low heat for around 10 mins till chicken is tender. Remove lid after 10 mins, give a mix and close the lid again.
  10. Dry up any excess water to get a thick gravy.
    To cook the Rice:
  11. Take one more heavy bottom pan & add around 2.5 litres of water. Place it on high heat.
  12. In water add Shah Jeera , Mint leaves , Salt(to Taste) green chilli.
  13. Stir it well to dissolve the salt completely .
    4.Once the water starts boiling, add the strained basmati rice & stir it well.
  14. Continue to boil it on high heat, stirring few times very gently to not break the rice.
  15. After 8-9 minutes when the basmati rice is almost done (80%) remove it from heat and strain the water.
    Layering the rice and cooked chicken:
  16. In a cooked chicken with gravy on top of the rice uniformly as shown in the video.
  17. Next, spread the balance rice as the top layer.
  18. Sprinkle some fried onion mint leaves on top of the rice . Close the lid and cook on low heat for 7-8 mins.
    4.Once you open the lid, mix the chicken and rice evenly.
    Chicken biryani is ready to serve with Dahi chutney!
