SIMPLE MUTTON PAYA RECIPE | PAYA KA SHORBA | مٹن پایا | मटन पाया | DECCAN’S PAKWAN
Ingredients
- Lamb legs or Bakre ke Paye : 5
- Onions : 2 (chopped)
- Turmeric Powder : 1 Tsp
- Ginger & Garlic Paste : 2 Tsp
- Spices (Garam Masala Powder) : 1 Tsp
- Coriander Leaves : 1 cup (chopped)
- Mint leaves : 1 cup
- Whole Green Chillies : 5
- Cooking Oil: 3 Tbsp
- Wheat Flour : 1Tbsp
- Bay Leaves : 2
- Elachi (Cardamom) : 2
- Lavang (Clove): 4
- Ginger: ½ inch
- Black Pepper: 1Tsp
- Cinnamon :1 Stick
Procedure:
1.In a Pressure cooker add lamb legs or paye. Add one chopped onion, turmeric powder, whole spices as mentioned in ingredients, ½ cup coriander(chopped), half cup mint leaves(chopped), salt and 1 litres of water.
- Close the lid and pressure cook for 10 whistle, simmer for 5 minutes so that the legs get tender.
3.Heat Oil in a Pan add chopped onions and fry for 5 min in a medium flame then add ginger and garlic paste sautee for 1 min.
- Add chopped Tomato and cooked for 3 min and then add green chilli, Salt and Turmeric cook till tomato get tender.
- In a frying pan, only three tablespoons of oil in the pan, when the oil is hot, add one tablespoon. Add 1tbsp of wheat flour and stir to golden brown.
- Add this cooking masala and sauted flour to the broth and Garam masala,add chopped coriander leaves and mint leaves and simmer for 10 minutes in a low flame.
- Paya is ready to serve with Roti or Naan.
