Hyderabadi DUM KA CHICKEN

Hyderabadi DUM KA CHICKEN | دجاج حيدر أبادي | हैदराबादी दम का मुर्ग | DECCAN’S PAKWAN

Ingredients

  1. Chicken : 4 kg
  2. Oil : 500 g
  3. Cashews (kaju) : 100g
  4. Onion : ½ kg
  5. Green Chili : 12-15
  6. Mint : ½ Bunch
  7. Coriander Leaves : 1 Bunch

For chicken Marination

  1. Curd : 600g
  2. Ginger & Garlic Paste : 200 g
  3. Kashmiri Chili Powder : 4tsp
  4. Red Chili Powder : 4tsp
  5. Coriander Powder : 6 tsp
  6. Turmeric : 2tsp
  7. Lemon : 3
  8. Garam Masala Powder : 1tbsp
  9. Whole Garam Masala
  10. Shahzeera : 1 tsp
  11. Kasuri Methi : 1 tbsp

Process

  1. Marinate the chicken with all ingredients mentioned in ingredients list
  2. Mix well & set aside in room temperature for 90 mins.
    3.Fry the sliced onions in oil till golden brown. Remove, cool & crush lightly with your hands.
    4.Give a stir and add the marinated chicken in the pan. Arrange it in a single layer with a spatula and cook on high heat for 2 mins.
  3. Now cover with a lid and reduce the heat to low. Cook covered on low heat for 30 mins opening the lid and stirring every 10 mins till chicken is tender.
  4. In a grinder jar add Cashews & grind coarsely then in a same jar add green chili, mint , coriander leaves & Fried Onion grind to a smooth paste.
  5. Add the grinded paste in a chicken , mix well & Cook covered on low heat for 10 mins till oil seperates.
