HYDERABADI BAGARE BAIGAN

HYDERABADI BAGARE BAIGAN | बागरा बैंगन | باگرا بینگن | DECCAN’S PAKWAN

Ingredients

  1. Baingan (medium sized brinjals): ½ kg
  2. Moong phalli (peanuts) : 1 cup
  3. Til (sesame seeds) : 1 ½ cup
  4. Imli ka gadha khatta : 1 cup
  5. Cumin seeds : 1 ½ tsp + 1 tsp
  6. Mustard seeds : 1 tsp
  7. Garlic pods : 1 bulb
  8. Turmeric powder : ½ tsp
  9. Pink salt : ½ tbsp
  10. Red chilli Powder : 2 tsp
  11. Coriander Powder : 1tsp
  12. Curry leaves : a handful
  13. Chopped coriander : ½ cup
  14. Whole green chillies : 4-5
  15. Oil : 6 tablespoons

process

  1. Dry roast peanuts, sesame seed & cumin seed.
  2. Grind masala of peanuts, sesame seed ,cumin seed, and Garlic.
  3. Heat Oil In a pan add mustard seed and curry leaves, saute for a minute.
  4. Add bringal & fry for 2-3 min. close the lid & cook for 3 min.
  5. Add ground masala. & red chilli powder ,turmeric powder & salt to taste. Saute for 2min.
  6. Add tamarind water and cook for 10 min on medium flame.
  7. Add Coriander Leaves & Curry leaves & put it for dum for 2-3 min.
  8. Bagara Baigan is ready !!
