DHABA STYLE BAIGAN KA BHARTA | مرق برينجال على الطريقة الهندية | DECCAN’S PAKWAN

Ingredients

  1. Baigan Large : 2
  2. Tomato: 4-5
  3. Ginger : ½ inch
  4. Garlic : 1 bulb
  5. Oil : 5 Tbsp
  6. Pink Salt to Taste : 1Tsp
  7. Coriander Powder : 1 tsp
  8. Red chill Powder : 1 tsp
  9. Kashmiri Red chill Powder : 1 tsp
  10. Turmeric ½ Tsp
  11. Onion : 1 Medium
  12. Coriander Leaves : 1 Tbsp
  13. Hing : pinch
  14. Cumin seeds : 1 tsp

Process

  1. Use round Brinjal, make cuts in the brinjal and fill garlic cloves.
  2. Coat brinjal with oil and roast.
  3. Likewise roast the Tomatoes.
  4. When the brinjals are Roasted, peel out the skin ,and mash the brinjal
  5. Heat oil in a pan add hing , zeera chopped garlic, chopped ginger and add oinion fry for 2-3 min
  6. Add Roasted, roughly chopped Tomatoes and add Coriander powder Red chilli powder, Kashmiri red chilli powder ,Turmeric and Pink salt
  7. Mix everything well
  8. Add Roasted, and mashed Brinjals cook well on high Flame
  9. The more you cook this dish, the better I”ll taste
  10. Lastly add chopped coriander leaves
  11. Ready to cook and serve with Roti /Rice
