DHABA STYLE BAIGAN KA BHARTA | مرق برينجال على الطريقة الهندية | DECCAN’S PAKWAN
Ingredients
- Baigan Large : 2
- Tomato: 4-5
- Ginger : ½ inch
- Garlic : 1 bulb
- Oil : 5 Tbsp
- Pink Salt to Taste : 1Tsp
- Coriander Powder : 1 tsp
- Red chill Powder : 1 tsp
- Kashmiri Red chill Powder : 1 tsp
- Turmeric ½ Tsp
- Onion : 1 Medium
- Coriander Leaves : 1 Tbsp
- Hing : pinch
- Cumin seeds : 1 tsp
Process
- Use round Brinjal, make cuts in the brinjal and fill garlic cloves.
- Coat brinjal with oil and roast.
- Likewise roast the Tomatoes.
- When the brinjals are Roasted, peel out the skin ,and mash the brinjal
- Heat oil in a pan add hing , zeera chopped garlic, chopped ginger and add oinion fry for 2-3 min
- Add Roasted, roughly chopped Tomatoes and add Coriander powder Red chilli powder, Kashmiri red chilli powder ,Turmeric and Pink salt
- Mix everything well
- Add Roasted, and mashed Brinjals cook well on high Flame
- The more you cook this dish, the better I”ll taste
- Lastly add chopped coriander leaves
- Ready to cook and serve with Roti /Rice
